Slow Cooker Anti-Inflammatory Moroccan Chicken Tagine

But first what is chicken tagine?

Tagine is a slow cooked stew that is flavored with various anti-inflammatory spices often including coriander, saffron, turmeric, and sometimes cinnamon. For savory tagines often preserved lemons and olives are added toward the end of the cook time. For sweet and spicy tagine often dried fruits such as apricots, prunes, or raisins are added.
A Tagine is a traditional earthenware cooking pot that has a wide base and a funnel shaped lid.
For this recipe we have made it simple. This wonderful Moroccan dish can be prepared in a slow cooker.
Ingredients
CHICKEN TAGINE MARINADE
4 chicken thighs , bone in, skin on
4 chicken drumsticks , bone in, skin on
4 cloves garlic,crushed
2 tbsp olive oil
2 tbsp lemon juice
1 tsp salt (or to taste)
CHICKEN TAGINE INGREDIENTS
1 large red onion
1 tbsp ginger , peeled, minced
2 tsp turmeric
1 pinch saffron
1/2 cup chicken broth - gluten free , 125mls
2 tbsp cilantro , chopped
1/2 cup green olives , pitted
Instructions
MARINATING THE CHICKEN TAGINE
1. mix together the chicken pieces, crushed garlic, olive oil, lemon juice, and salt and let it marinate for 30 minutes and up to 4hrs.
SLOW COOKER CHICKEN TAGINE
1. Saute the red onion and ginger over a medium low heat for about 5 minutes.
2. Add the turmeric and saffron to the onions and stir well to combine.
3. Add half the onion mixture to the base of the slow cooker then add the chicken thighs and drumsticks. Cover with the remaining onion mixture and add 1/2 cup chicken broth or water.
4. Cook the chicken thighs and drumsticks on high for 3-4hrs or low for 5-7hrs.
5. When the chicken is cooked add the olives and let them warm through for about 30 minutes.
